This festive IPA was brewed with pilsner, wheat, oats, and lactose, and lightly hopped in the whirlpool. After dry-hopping, this holiday beer was conditioned on ground cinnamon, nutmeg, clove, and bourbon-soaked vanilla.

DATE: January 9, 2026... OCCASION: I begin the first "non-holiday" weekend with some "No One Wants This" with Shan... GLASSWARE: Duvel snifter... hazy, sallow yellow body rife with streaming bubbles rushing upward to build tree finger's worth of mushrooming off-white head... an explosion of citrus erupts--grapefruit, lemon, guava, and striking pineapple makes a tart punch of an entrance... meanwhile, its vanilla and lactose create a dessert-like aroma that pulls you in with an after-effect of lemon creme... a substitute for eggnog? its palate is incredibly agreeable: fuzzy, lively at the teeth, acidic and aggressive at the mouth, and smooth at the throat... it's medium-bodied and beguiling for a 7.4% ABV... its flavor profile is worthy of eggnog displacement: pineapple, guava, and grapefruit create a tartness that puckers but doesn't embitter.... its secondary flavors of vanilla, lactose, clove, and icing make this an enjoyable experience.... it's tough to consider replacing eggnog, but this is a nice departure....
