Singing those sweet sweet melodies to the tastebuds, Kane Brewing soothes the storms of decadence with a maple, coconut imperial stout that’s spent a good amount of time soaking up the flavors of bourbon barrels.

Symphony at Sea softly layers in the snifter with a deep, dark and layering appearance striking the difference between mocha milkshake and espresso. As its frothy and nougat-like froth rises from the stout, the lavish scent of deep caramelization, blackstrap molasses, maple, vanilla and candied nuttiness greets the nose as well as early malt impressions in taste.

Mouth coating as the dark ale seeps into the middle palate, the robust sweetness of dark chocolate, candied espresso, toasted coconut and maple candy all resonate strongly while a background of bourbon applies its own caramel, vanilla, nutty oak and coconut flavors in a warming kahlua-like spice.

Recklessly full on the palate, the beer feels like cake batter meandering around the palate and giving a pleasantly cloying finish. Its a heavy dessert stout that’s relegated to a slow and sipping session that seems almost as fitting for the breakfast nook as it does the dinner table.
