Tide & Timber Black & White Cookie is our Barrel-Aged Imperial Stout brewed in collaboration with our friends at Esker Hart. Tide & Timber Black & White Cookie was aged in a blend of Woodford Reserve Double Oaked bourbon, Heaven Hill bourbon and Woodford Reserve Wheat Whiskey barrels for a total of 23 months, then conditioned on vanilla beans from Madagascar and Comoros as well as cacao nibs from Ecuador and a large dose of graham crackers.

bottle to snifter.
look: dark thick black, minimal head, some lacing, sticky oil legs cling to glass when jostled.
aroma: Fudge, whiskey
taste: chocolate syrup, bourbon, oak, some maple/brown sugar sweetness, and also a fruity (strawberry?) flavor,
feel: syrup
I think I am getting intolerant of the overly sweet stout. Tasty, but to sweet and syrupy.

Pours thick and viscous, impervious to light, zero head. Huge chocolate aroma! Has a bittersweet fudge flavor, yet sweet vanilla balances it nicely. I get the graham cracker flavor towards the finish, but it is the chocolate that lingers well past the swallow. Barrel flavor is noticeable but in the background, allowing the adjuncts to be front and center. Incredibly thick, like motor oil. Minimal carbonation adds to a creamy texture. Overall a delicious BA beer.
