Saison with Pink Peppercorns and Azacca hops.
This saison is pink peppercorn revelation! "Things Have Come To Light" is just that - a bright and light saison with gentle peppery notes from the yeast that pair beautifully with the distinctive floral aromas from the freshly crushed pink peppercorns sourced from our friends at local spice shop "Epic Spices" on Chicago Ave.
The Azacca hops play a supporting role, but an important one, contributing round notes of papaya, cantaloupe, and guava.

L: amber body; off-white head dissipates quicker than I’d like
S: floral, farmhouse yeast, tropical fruit
T: spicy farmhouse yeast, papaya, floral citrus, peppercorn, melon
F: medium body, moderate carbonation, balanced finish
O: better than expected - nice flavors all around

I was surprised that Pipeworks, purveyor of IPAs, has 24 saisons. I've had two; now three and Things is the best of them. But to set a high bar for Things' evolution, I had it side-be-side with my favorite Chicagoland saison, Apex Predator. Things has some of Apex's juicy quality, but does not approach Apex's yummy factor.
And while Things is Pipeworks' best saison I've tasted, it still needs a more active yeast. This would improve Things' average Looks and Smells. While Tastes are good enough and balanced, they are not distinct. The mouth is more lively than I thought likely given the average Looks and Smells. Things is better than OK with appetizers.
Pipeworks is enormously prolific, over 400 brews in less than a decade. I shy from them because they pile in the hops (albeit with the purpose of appeal) and I quibble about their price/value. But the bottom-line is Pipeworks is a very successful crafter and I gotta give them some pretty good OA Hugs for that.
