A blend 60% steel-aged, 30% Foeder-aged, and 10% Bourbon-aged Saison Fall of the Rebel Angels is re-fermented on local chokeberries and our house mixed culture.

Bottle with no date split between two regular snifters. The look/pour was ruby color and a big soapy white head that stays around and some solid lacing when consumed. The smell is fruity, lemon, pepper, oak, vanilla, white wine, rubber. The taste was kind of the same: tart fruitsy saison taste with barrel notes in the back end. The feel is light dry and effervescent. Overall burial beers are always nice and different im a good way.

750 ml brown bottle, sample from the brewery.
Pale amber with a faint rose hue, nearly clear with some great lacing on top. Dry and crisp, a mild juicy tartness upfront with lots of mellow wood tannin flavor. Hint of booze, coming from the wood rather than the alcohol. Some funk and lingering tartness. Quite easy to drink, a lot of fun as there is so much going on for a mid-sized Saison. Stays true to style even with all of the delicious distractions.
