this is a near saison type aged in red wine barrels, more wild than most others i have had from these guys, moving neatly from an earthy almost toasted malt beginning to a tart and citric puckery middle thats oddly clean for how grainy the beer starts, and then finally into a woody and fruity finish, heavy red wine barrel character to round it out, a little sweetness coming back, and a dark fruit complexion that makes this really interesting. not much of a brett character here really, this seems more lacto and associates, acidity is developed somewhat more than the flavor from it, but its not too sour. i like all the red wine and wood here, its tannic and fruity, but also earthy and soft feeling, which is aided by the sturdier grain base, more than just pale wheat here for sure. i get a cherry note later on, and a fresh baked biscuit, working towards dry but not there yet, slight belgiany yeast, peppery for a second, and some sharp lemon acidity. neat beer, it really seems like these guys are capable of anything, and i am so stoked to be seeing their stuff around the market. this one is on tap at the craft fox right now, i have not seen it anywhere else yet.
