Collaboration with Holy Mountain Brewing

Made from 100% wheat grown and malted in our respective lands, a blend of our mixed cultures, and the handicraft of a couple of gents who honed their skills on a tiny island in a deep blue sea. Aged in a mix of Wine, Brandy and Bourbon barrels and finished with chamomile and honey. Brewed with Holy Mountain Brewing. Bottle conditioned.

two of my favorites of the new wave coming together for this one, a treat to find it on tap, and a beer with just a ton going on in it, a blended wild saison type from what i understand, pale straw colored in the glass under a short and short lived layer of bubbles. the aroma is strong white wine right away, oaky and grapey and tannic and zesty, fresh and interesting against the mature funky bretty complexion and the chamomile, which gives a distinct herbaceousness to this, and sort of gives this a springtime vibe, makes it delicate, some light acidity here too. the flavor is awesome, lots of wood and an appreciably hearty cereal malt base, dry but agricultural and interesting, maybe some rye in here. i dont know that this is all brett, there is a lot of it here, but i also get a saison type yeast character in this, which has a light spiciness and a floral aspect that works great with the chamomile in the finish. its dry from a grain sense, but i can get the honey too at the end, almost like it was back sweetened with it after fermentation, also floral and bright and light. tart peachy funk and a little of the brandy to finish, great complexity and drinkability at the same time, and i can sort of gather what each brewery contributed to this one, its a nice meld of what i know about both operations. killer beer, i would love to find a bottle of this!

A: The beer is slightly hazy yellow in color and has a light amount of visible carbonation. It poured with a short white head that quickly died down, leaving wispy lacing on the surface and a narrow collar around the edge of the glass.
S: Moderate aromas of apple brandy are present in the nose.
T: The taste has lots of flavors of white wine from the barrel aging along with hints of brandy. No bourbon is perceptible.
M: It feels just about medium-bodied on the palate and has a low to moderate amount of carbonation.
O: This saison is packed with lots of flavors of wine and brandy from the barrel aging, although I couldn’t get any of the bourbon.
