an open fermented saison and a pretty good, tart and interesting, but also very clean, sort of loosely belgian estery, but different than what i am used to in the style, unique in its fermentation profile, but also not as objectively awesome as most of the burial beers, drinkable enough and all, but more fun because its different if you know what i mean. the tartness has a little chemical element to it, like it was a bit warm or something, and the grain base of the saison seems layered but its so light that its about lost to the acidity, which isnt even that high. some light under ripe apricot and nectarine notes, white wine tannins, clean zestiness, and maybe a bit of rye spice too. more bacterial than funky, but a fine mix of both, is this a mix of cultured and wild yeasts or what? its pretty cool, but there are so many good beers at burial that one was enough and it was time to move on to something else. i could see this potentially ageing well, the process yields something thats easily identifiable as weird, but it tastes good too. i cant get enough from burial right now!
