a lager with brett, brewed with invasive species in florida, but not exactly as interesting as i was hoping for. the beer is good, well made like all the burial stuff, and rather drinkable and refreshing, but the brett is young and underdeveloped to me here, not adding the dry farmy funk i was expecting it too, and in fact sort of interfering with the lager yeast crispness and cleanness that the base beer would have without the brett. im not sure how you make one of these, with brett obviously liking warmer fermentation conditions than conventional lager yeast, perhaps the lager is about done before the brett comes in and the beer is allowed to warm up, its odd, it almost makes the lager itself taste less fresh this way, although i have no idea if thats how they do it. some neat fruity esters here, green apple and pear and taffy from the fair, with a dry cereal grain bill behind it and just a little saison character. i wanted it to be drier and more funky, or else real subtle on the wild side and still real snappy and clean, and its lost somewhere in the middle. cool idea, lackluster execution i think, no doubt a hard one to execute, but this didnt totally resonate with me...
