Imperial stout with cherries, roasted pistachio, cocoa nibs, and vanilla bean.
Things come and things go. Such is the balance of life we are presented at birth. The finest memoirs come along with it, into the earth with our bodies and into the ether with our thoughts. Inspired by spumoni, and our lust for visiting far off lands, this stout was made with Forestry Camp-roasted pistachios, alongside massive doses of French Broad cocoa nibs, Madagascar vanilla bean and Northwestern dried Bing cherries. Plate up some crumbled baklava, topped in cherry cream pie, chocolate ganache and a scoop of pistachio ice cream.

Served in a tulip
The beer poured a fuller bodied, near pitch black hue. Slick and oily looking in the glass. The liquid was capped by a small, bubbly, saddle brown film that transformed into a pencil thin collar. After every sip, tiny dots of lacing cascaded down the front side of the glass.
The aroma was really rich and sweet. Caramel malt and toffee notes dominated. Touch of burnt sugar too. Cherries also came through strong. Vanilla was quite prominent as well. The sweet cherry note intensified as the beer sat. There was a subtle dark chocolate presence too. Hint of roasted malt character.
The flavor profile was similar to the nose and equally impressive. Super malty and robust up front. Caramel malts came through strong. Touch of roasted malt character too. Loads of rich dark chocolate and powdered cocoa as well. Cherry notes appeared in the center along with a big fresh vanilla bean presence. More roasted malts on the back end and the finish.
The mouthfeel was terrific. It was super creamy and smooth. Fuller bodied for the style. Oily and slick on the palate. The liquid contained an ultra fine, subtle effervescence that fluffed up nicely.
Burial Beer Co. are making some of the best pastry stouts in the country, and this one is another winner. Despite the fact that I did not detect any pistachio, this beer definitely exceeded my expectations.

A - Pours pitch black with a very thin tan head. Light amount of oily lacing.
S - Aroma is
T - The taste is dark chocolate, vanilla, sweet and tart cherries and finishing with a nice nuttiness.
M - Full body with low carbonation. Syrupy mouthfeel with a slick dry finish.
O - Really well done. Sweet, but not cloying. Really enjoyable.
