Saison with Lemon Zest, Lemongrass and Peppercorn
Humans dwell among a precipitous judgment. We are but lemmings, lining up for the fall. We endear ourselves to be purely entranced by that which is beloved by others. But we also can find ourselves deeply entrenched between the vibrant power of subjectivity, when we remove ourselves from the collective grip of understanding. So we made another Saison, inspired by smells and flavors that intoxicate our zeal for existence. Made with Riverbend Malt House Rye and Epiphany Craft Malt Triticale and Oats, and hopped quite well with Cashmere Hops. We then spiced the beer with fresh Lemongrass, Meyer Lemon Zest, and a small helping of White and Black Peppercorns. A journey to your favorite Atlanta wing spot, with freshly brewed lemongrass sweet tea and a dollop of lemon curd pie.

A: Pours a murky dark golden yellow in color with moderate amounts of active visible carbonation rising along the edges of the glass and moderate burnt orange + bright yellow + amber colored highlights. The beer has a two finger dense creamy foamy white head that slowly reduces to a medium sized patch of thick film surrounded by a large patch of medium thick film covering the remainder of the surface of the beer and a thick ring at the edges of the glass. Moderate amounts of lacing are observed.
S: Moderate to strong aromas of wheat + slightly spicy rye + oat malts with a hint of grainy sweetness. Moderate aromas of spicy peppercorns (black and white), lemongrass, lemon citrus, and spicy saison yeast. Light to moderate aromas of grassy + herbal hops.
T: Upfront there are moderate to strong flavors of wheat + slightly spicy rye + oat malts with a hint of grainy sweetness. That is followed by moderate flavors of spicy peppercorns (black and white), lemongrass, lemon citrus, and spicy saison yeast. Finally there are light to moderate flavors of herbal + grassy hops which impart a light amount of bitterness which slowly fades away leaving light lingering lemongrass + pepper flavors.
M: Medium bodied with moderate amounts of carbonation. Light amounts of dryness in the finish.
O: Easy to drink with well hidden alcohol and a refreshing mouthfeel with a hint of dryness. Enjoyable “clean saison” with peppercorns and lemongrass/lemon additions. Exactly what I had been hankering lately a more classic style saison rather than a mixed fermentation one.
