a collaboration with allagash, deeply heady. if i was a brewery, that would feel like making it, doing a beer with those guys in this style, but burial has long since made it, its just cool, a no brainer to buy a four pack from the no freestanding bottle shop next to the original burial spot. its lovely beer, drinkable, springy, delicate, awesome. triticale in this, which is uncommon but definitely belongs in a saison, not traditionally necessarily, but by character for sure, also raw wheat, subtle hops of hallertau and american and new zealand cascade, but this isnt hoppy per se, those are wonderful flourishes in a beer that would also be great without them. very light in color, straw yellow with a tall and slow fading airy white head, looks effervescent and peppy, excited but not frantic. the nose and taste do about the same thing for me, light white winey and pear-like yeast esters, less of the spicy side of saison to me, verdant with the hop element, nuances of white flowers in spring, melon rind, green tea and its bitterness, honeysuckle, bee balm, light green pine, very fresh, light on the malt side too, not as heavy as raw wheat sometimes makes these, triticale hits a little bit like pale rye but more mild here, some nuttiness there but still easy, not as big an influence as i thought it might be, but still indelible. the yeast is great, and this warms up to feature more of it, light white pepper, a hint of coriander, lemongrass, jasmine, maybe there is some allagash influence here. this is light but fluffy, bubbly and dry, quick but complex too, earthy and interesting, not really rustic in the classic sense, its polished, clean even, but still with some agricultural interest, the new zealand hops add a little thiol thing thats real compatible with this yeast, and overall its an impressive offering that goes fast and slow and hits all the pleasure zones. glad to have scored this, burial does a lot of things but the farmhouse stuff still excites me most! could see this being amazing with a funky brett side to it too, but as a clean saison its also outstanding.
