A contemporary take on a timeless classic, our flagship Sanitas Saison blends old world tradition and new world ingredients. Bright gold in color with a cloud-white head, expect this beer to glow with aromas of sweet apricot and bubble gum. Our unique Saison yeast imparts a refreshingly tart fruit flavor while French and American hops leave pleasant citrus and grass notes in the finish. A fine representation of the modern Saison.

Bought from Beer Drop, I'm learning lots about how rare it is to brew great saisons at higher elevations. (But Colorado keeps trying and I gotta love 'em for learning the world's most food-friendly style.)

Sanitas has produced a very good table ale (high enough praise); but a middling saison (50-50 praise.)

A decent Looker for initial color and big-bubble foam, but Sanitas cannot sustain its suds. Most likely, this is the result of the yeast tiring out; a common problem I find in Colorado Saisons. Is it the altitude ? (I call it my Mile High Yeast theory.) The Taste of Sanitas works; but is undistinguished, mostly citrusy. But, alas the tired yeast. Feel is bubbly enough to clean the palate for more food. Sanitas does its job well.

As for my brewer micro-review... Sanitas seems to operate on a common Colorado theme that creates lots of competition, particularly in a college town like Boulder. But who wouldn't want to brew in Paradise? Love what you do, love where you are. Sanitas seems cool, but much of Colorado is cool. Since this Saison is their cash cow, maybe they should get a food operation going... once Covid is controlled. Good luck !

3/15/21 I had the second can from Beer Drop. I've edited the above review and bumped up the OA because I like Sanitas and will look for them again when placing my next BD order. As for Saison, I'm keeping count over at UnTappd. A Sante'... or however that is said at One Mile High.

Look:
Low on carbonation (especially for a Saison). I didn't get even a 1-finger head pouring from a 12oz can. Slightly hazy pale yellow / straw color. A bit of lacing but it is not a very "energetic" beer.

Smell:
Slight sour smell. A bit floral and grassy. A hint of biscuit/crackers. Not very aromatic otherwise.

Taste:
At first there is a blast of tart fruit and some bitterness (hops). Malt flavors start coming in with a mild sweetness that cuts through the sour beginning. You then get that authentic Saison yeast tang and slight metallic taste. As the yeast funk flavor fades, you get biscuit, bread, and some lightly roasted malt flavors. It dries out just a bit, but overall a fairly sweet Saison.

Feel:
Light bodied/mouthfeel. Not much fizz at all as it died early on. Feels quite flat and thin in the mouth.

Overall:
Overall a good tasting Saison. This one would have scored much higher if there were more carbonation and not so flat feeling. This recipe has potential as the flavor is where it needs to be.

I bought this on a whim as I have been enjoying Saison's a bit more lately and have not had any of Sanitas beers. I can definitely see why some of the prior reviews say this is a faux-Saison as it definitely only has a hint of the Saison flavor to me and is a lot clearer than a lot of Saison's I have had...however I find this to be a very drinkable and pleasing beer...

Shame on this brewery. This is not rusitc, a saison, or a farmhouse ale.

As StonedTrippin said, this is nothing like a saison. It's very malt-forward and the yeast character I pick up is one of a Belgian Pale rather than that of Saison, which is the defining characteristic of the style. It would nearly qualify as bière de garde if it weren't for the Belgian Pale yeast flavor. Unfortunately, though, the malt and yeast flavors clash. They tricked me into trying it at least; I'll stick to the better CO local saisons that actually taste good and are representative of the style.

Appearance: Pours a slightly hazy honey color with a somewhat rocky head; strands of lacing linger

Smell: Bready and somewhat sweet, with hints of butterscotch and lemon

Taste: Very bready, up front, with sugary sweetness and a hint of butterscotch developing; after the swallow, there is a lemony tartness that develops to offset the sweetness but it is the sweeter tones that linger in the aftertaste

Mouthfeel: Light to medium body, slightly creamy; moderate carbonation

Overall: More like an American Wheat than a Saison, I could see this one being consumed on a hot summer day but it really isn't that impressive

Flat brassy gold color, thinner eggshell white foam cap. Smell is a sort of faint whisper, swirling brings out yeasty esters, soft bread malts, maybe crisp apples, faint vinegar note. Taste is sort of bland and limp, a little bit funkiness in the finish. Watery.

Drain pour.
