La Biere de Fantaisie is a collaboration ale brewed with our friends at Off Color Brewing in Chicago. Our shared love of the farmhouse ales of Belgium and France was the inspiration for this Saison, which is a blend of several puncheon-fermented Saisons that were aged for 10 months before being naturally conditioned in this bottle.
Fancier Beer (Blend #2) uses Side Project’s saison yeast and Off Color’s wild yeast.

Hazy apricot with a bubbly white froth leaving fluid white spots on the glass.
Woody blue cheese and pepper lead the nose with apricot, toasted oak and grapefruit following.
Funky, sharp and spicy apricot and pepper pop just before tons of oak and sesame curl into an acetic grapefruit splash with a firm fizz that finishes quite dry.

Gold to light copper in color. There's a fingernail of dishwater white around part of the rim and about the size of dime in the middle. The aroma is of oak and chardonnay. I'm tasting green apple, pear, oak, and chardonnay. The mouth is moderately carbonated and crisp.

also known as fancier beer, a collaboration with off color out of chicago, using their wild yeasts i believe, and im not going to say i was disappointed, because all of t he side project (and off color) stuff is tremendous, always, but it want quite as different and weird as i wanted it to be, and i suspect more time to mature in the bottle would help it a lot. not that it tasted new or anything, it was funky and dry and bright and all of that, rustic and fruity on the brett, a little tangy but not real sour, it just tasted somewhat less complex than others of theirs (either of them), and maybe isnt all the way done. lots of bright fruitiness here though, even cherry and berry or something, odd in a pale beer like this, but its there alright. the real surprise is that its 8% abv. it drinks much lighter, although it does have some body from the grain and just a bit of a sting, as much from the bacteria though as from the alcohol, smooth still and bubbly. having a number of side project saisons in one sitting is always a treat, a rare treat, but sometimes i think their beers are best in isolation. a lot of subtle differences between them, but many of them share overarching themes and commonalities that seem a little less special when you have a few in a row. i think this may in some ways be victim to that phenomenon for me, great beer, but didnt tickle me the way the others have. weird yeasty, but good...
