Notes: Blended American Wild Ale

14% Saison du Fermier that was fermented in French Oak with Side Project’s Saison/local microflora mixed culture and then racked to and aged in a light toast American oak foedre for six months.

31% Saison du Fermier that was fermented in and aged in a heavy toast American oak foedre for four months with Side Project’s Saison/local microflora mixed culture.

46% Missouri Wild Blond Ale that was aged a French oak foedre that Side Project has been pulling solera-style pieces from for the past four years. Higher acid (base for Fuzzy).

9% Missouri Wild Ale that was aged in Missouri oak chardonnay barrels (59 gallon) for 3 years.

Now this is a beer. Yes sir! I’d walk a country mile to drink this one! Imagine a hard day of work and then going back to the barn with the farmer’s daughter for a little romp. This is that! Ecstasy! I want it in every way!

Reviewed from (long-standing) notes. Consumed 8/3/17. Poured from a 750 mL bottle into an El Catador Barrel-Aged glass.

A: Moderately hazy gold, with a good amount of visible carbonation. A half-finger of white head fades fairly quickly.

S: A nice depth of funk – barnyard, horse blanket, and feet. Some white vinous character mixes with the lactic tart acid. Milder citric acid, cracker malts, and oak tannins. Quite a nice and complex aroma.

T: Lactic tart and lemony citric acid. Oak and funk – barnyard, cheese, and fresh hay. Dry tannins and light cracker malts. Some dry vinous character and more tannins near the swallow.

M: A fairly light body, but the carbonation is a touch lower than expected. Alcohol presence stays quite low.

O: Tasty enough as it is, but I’m curious what some age will do. A nice funk and depth to it even now.

Aromas of white wine, vinegar and light oak.
Tastes of green apple, vinegar, on the medium high level of acidity. Chardonnay like mouth feel.
Overall a nice blended wild ale, with white wine, oak and green apple/vinegar acidity.

750 mL bottle. Clear golden body. Smells oaky and some stone fruity acidity. Nice golden sour aroma. Tastes dramatically sour. Sharp lemon sourness and stone fruit. Oak. Really dominated by sourness, though. I guess it's ok, but really sour and a little difficult to drink.

Look: Yellow Clear with medium white head. Has medium high carbonation.
Smell: Tart, green apples, lemon, Funk, and Chardonnay.
Taste: Tart, green apples, orange peel, lemon, Funk, and Chardonnay.
Mouthfeel: Medium light and complex.
Overall: A good sour from Side Project.

Always loved the name of this beer and the simplicity of the label. A 'thanks' to a local shop for their support to the brewery, awesome. Been wanting one of these for a long time now:
L - frothy top fades quickly, left with a semi-opaque nectarine color
S - acidic smell, apples and lemon, sweet stone fruit to round it out but I've already gleeked in anticipation from the low pH
T - Acidic again but has a nice compliment of fruit pith and straw, taste is overshadowed by the lingering acid in the mouthfeel.
M - a bit harsh and acidic again, this has quite the compliment of SdF (one of my all time favorite saisons) but in no way does it compare. The dry-acid finish is quite harsh.
O - It's definitely a good beer, but the label on this is totally carrying the scoring here. any other label on this would see a plummeted rating, Side Project deserves the hype for any release but this is not holding a candle to most of their offerings.

This one pours a lightly hazy straw yellow, with a small head, and a good bit of lacing.

This smells like slightly fruity/sweet blue cheese, grassy funk, stone fruit, lemon zest, and slight acidity.

This is really exceptional. It's got a light cheesy funk, and a soft grainy sweetness. There's sour apricot and lemon zest, and a killer grassiness on the finish. This is godly.

This is light bodied, crisp and super clean, with a slightly lingering acidity.

I haven't had all that much Side Project, but I'm always craving more. This is as perfectly balanced as it gets.

Bright and hazy orange-yellow with a fuzzy white head that settles to a thick collar with no center.

Smell is orange, grapefruit and apricot with a clean, balanced funk featuring hay, grass, lemon and blue cheese.

Taste is tart lemon, orange and kiwi with hay and barnyard funk, but again, it's a clean expression of complexity.

Merci has a full froth but a light, bouncy body with a sharp swallow and a dry finish.

Pour a lightly orange pale body with a tiny white head that fades. Aroma is bright and tart, smoothly blended wood and buteric acid notes akin to a light gueuze. Lots of acidity on the palate, but nice layers of flavor underneath. A bit let tang would be great, but lovely none the less!

750ml bottle, blend #3 from TWCP. Served in a Side Project (lightbulb) stemmed glass. Pours a hazy golden body with a slight orange hue, one finger thick white head, good retention and no lacing. Smell is stonefruit, moderate lactic acid, oak, minimal funk, mildly sweet grain, vinous character. Flavour is a moderate-heavy lactic acid, stone fruit, light oak, touch of grainy sweetness, and a bit of white wine and more stone fruit. This starts out as sour then sweet. Mouthfeel is medium bodied, appropriately carbonated with a moderate-heavy lactic acidity and mild stone fruit. This is a fairly sour ale, and it makes me think of Fuzzy but without the actual fruit added. This could easily be a Pulling Nails blend.

Pours an orange tinged gold with a 2 finger eggshell head. Moderate retention but minimal lacing.

Big lemony aroma. Some stone fruit. Apricot and peach. Musty funk, some straw.

More lemon on the tongue. Some wine grape. A slight medicinal taste. Apricot pith. Some oakiness. A tinge of vanilla surprises near the end.

Light body with puckering tartness. Crisp. Citric acidity.

Classic SP flavor and feel. Quite tart with an underlying fruitiness.
