Blended American Wild Ale
14% Saison du Fermier that was fermented in French Oak with Side Project’s Saison/local microflora mixed culture and then racked to and aged in a light toast American oak foedre for six months.
31% Saison du Fermier that was fermented in and aged in a heavy toast American oak foedre for four months with Side Project’s Saison/local microflora mixed culture.
46% Missouri Wild Blond Ale that was aged a French oak foedre that Side Project has been pulling solera-style pieces from for the past four years. Higher acid (base for Fuzzy).
9% Missouri Wild Ale that was aged in Missouri oak chardonnay barrels (59 gallon) for 3 years.
14% Saison du Fermier that was fermented in French Oak with Side Project’s Saison/local microflora mixed culture and then racked to and aged in a light toast American oak foedre for six months.
31% Saison du Fermier that was fermented in and aged in a heavy toast American oak foedre for four months with Side Project’s Saison/local microflora mixed culture.
46% Missouri Wild Blond Ale that was aged a French oak foedre that Side Project has been pulling solera-style pieces from for the past four years. Higher acid (base for Fuzzy).

Pours a foggy yellow-orange with a sunburst effect within some lighting. Head is two fingers of white foam. Aroma is white wine, earth, lemons, and oak. It has a very mild acidity that grows slightly as the beer warms. It has a twinge of funk to it, that develops into a more full-on lactic sourness as the beer warms. Flavor profile is lemons, white wine, oak and some faint earthy and bready notes. A subtle honey sweetness comes on late, adding a subtle rise of sweetness to the green apples and lemon. Really crisp, spry tartness that comes on at the end, bringing a conclusion to the tasting notes. Acidity is very mild throughout, peaking around the back third. Mouth feel is medium in thickness. Texture is akin to a boiled liquid, with a very soft effervescence around the edges. It gives it a semi-plush consistency. Overall, it pushes forward some sour, funky notes, but never dives into full on sour. It does a great job of shifting and transitioning between notes, keeping its footing throughout the performance. Lovely funky little bomb.
Served in a 15.5oz Spiegelau tulip from a 750mL bottle. Consumed / reviewed 3/22/22.

Reviewed from (long-standing) notes. Consumed 8/3/17. Poured from a 750 mL bottle into an El Catador Barrel-Aged glass.
A: Moderately hazy gold, with a good amount of visible carbonation. A half-finger of white head fades fairly quickly.
S: A nice depth of funk – barnyard, horse blanket, and feet. Some white vinous character mixes with the lactic tart acid. Milder citric acid, cracker malts, and oak tannins. Quite a nice and complex aroma.
T: Lactic tart and lemony citric acid. Oak and funk – barnyard, cheese, and fresh hay. Dry tannins and light cracker malts. Some dry vinous character and more tannins near the swallow.
M: A fairly light body, but the carbonation is a touch lower than expected. Alcohol presence stays quite low.
O: Tasty enough as it is, but I’m curious what some age will do. A nice funk and depth to it even now.

750 mL bottle. Clear golden body. Smells oaky and some stone fruity acidity. Nice golden sour aroma. Tastes dramatically sour. Sharp lemon sourness and stone fruit. Oak. Really dominated by sourness, though. I guess it's ok, but really sour and a little difficult to drink.

750 mL bottle. Clear golden body. Smells oaky and some stone fruity acidity. Nice golden sour aroma. Tastes dramatically sour. Sharp lemon sourness and stone fruit. Oak. Really dominated by sourness, though. I guess it's ok, but really sour and a little difficult to drink.
