Collaboration with Casey Brewing & Blending
Velvet is our collaboration brewed with our friends at Casey Brewing and Blending in Glenwood Springs Colorado. Troy joined us in St. Louis to brew this Saison that was fermented and aged with mixed cultures from both Missouri and Colorado. After maturing in French Oak wine barrels for 12 months, Velvet was finished on 1400 lbs of Colorado Apricots before being naturally conditioned.

Look - incredible slight haze golden with a nice white head and sticky lacing
Smell - funky tart citrus scents
Taste - really funky tart citrus with a ton of different fruit
Feel - medium full body with a slight champagne sparkle
Overall - really funky and tasty

Medium lighter orange straw body, one finger white head. Really nice apricot character. Solid tartness and acidity, not overwhelming. Big apricot tart flavors follow all the way through.

This one pours a hazy golden yellow color, with a small head, and lots of lacing.
This smells like juicy and super fresh apricots, oak spice, candied stone fruit, herbal/floral funk, and a soft wine-like acidity.
This is absolutely excellent. Both versions of this collaboration have been some of my favorite beers from each brewery. The apricot flavor is so fresh and so juicily sweet, with a soft pillow acidity and just dripping iwth fruity sweetness. There's some oak and wine, a touch of herbal funk, sweet, almost like lavender maybe.
This is light bodied, super clean, and very drinkable. This would be an extremely easy solo dome, even as a 750ml.
This is definitely the best of the various SP/Casey collabs - it's such a treat to be able to have this.

Foggy maize with a moderately lumpy off-white head that has very strong, long lasting retention and clings in a tall thick curtain all the way around the glass.
A brightly grassy hay and oak nose gives way to a zesty, juicy sweet apricot palate. Wow it's just so dang juicy sweet! This is tart like gooey Gushers, with a mild oaky funk running in the background, while an herbal, expressive zingy zip explodes on the palate. It is sour, but perfectly so, which is notable for SP, and even has some warming alcohol aspects to it.
The soft medium-light but fulfilling body has a semi-dry tingly finish that brings out a light malic acidity that playfully stings on the way down.

poured from a 750mL bottle into a stemmed bulb glass. pours a hazy bright orange with plenty of soapy white head. head clings to the glass leaving spotty lacing. smells of white wine, acidic fruits and a little bit of funk. taste is similar with nice apricot and white wine notes. very sour. that’s apricots though. feel is nice. bubbly but not overly so. sits on the tongue real nice. overall, not as good as leaner but better than jammy. i love apricots in sour beer so this hit a lot of high notes for me.
