This blend has threads of Oude Fermier and Oude du Blé which were aged for 18 and 19 months in French oak 500L Puncheons that were entwined with Sunsets (our collaboration with Sante Adairius Rustic Ales) which had rested for 9 months in French oak. The blend was finished with a touch of Missouri wild ale which had rested for 33 months in neutral oak before the final blend was dry-hopped with Citra hops.

Cellared a year. Somewhat murky pale yellow body, white cap. Wine forward bright oak, lemon, really pleasant passionfruit, kiwi, grapefruit, and fresh flowers for the smell. Taste almost exactly the same with the emphasis on the fruited notes with playful, sourness, oak, and wild yeast finish . Feel is medium light bodied with a controlled sourness that is pleasant and raises the palate. A refined wild ale that is flavorful in an artistic way. Reminds me of afterthought or white rooster

Poured from tap at Oak and Steel in KC. Bright slightly murky yellow color. Nice smooth white head and great curtain lacing. Tart apple smell and taste. Funky white wine, a bit vinegary but a hint sweet. Smooth feel. Another great beer from SP.

Pours a lightly-hazed light burnt orange color with modest effervescence and a couple fat fingers of antique white head that fairly quickly settle into a lasting small cap that leaves spotty lacing.
Delicate aroma showing hay, wood, citrus, vinegar and cheesy funk.
Sharply tart tasting with citrus, Sweet Tarts candies, white grape juice, hay and some distant cheese.
Fuller bodied than expected and somewhat syrupy feeling (aided by the sugariness of the taste) with zippy carbonation.
The fruit flavors in this are quite nice, but it’s both sweeter and tarter than I expected or enjoy in large volumes. Solid in small servings, but soloing a 750ml will become a chore. Time to pair it with some food.

It’s tart, funky, and salty with a pleasant hop profile. The white wine barrels give a depth of character. Medium bodied, dry, crisp, plenty of alcohol presence. Super easy to drink. Just about everything I want from a saison.
Note: the notes on the bottle do not mention SARA and says they use Nelson hops as well as aging in white wine barrels. But it does say #11 on the bottle, so I’ll rate it here.

Pours a solid orange, brief but active 1" head, no retention or lacing. Nose is very lactic; hay, grass, and ample wood; apricot and underripe stone fruit. Taste follows closely - assertively sour with lots of stone fruit, grassiness, and oak. As it warms, some sweeter elements come out, but this stay tart throughout. Mouthfeel is moderate with crisp, refreshing carbonation. A very clean and refreshingly saison, with the only knock being a bit too much oak character for my liking (but that's just personal preference).

Golden yellow. Very odorous. Citrus, stone fruit, peach. But just way too tart and acidic for me to enjoy beyond a glass.

poured from a 750mL bottle into a SP stemmed bulb glass. pours a foggy orange with a billowing white foam cap. barn funk, hay, musty oak and subtle melon on the nose. taste follows with a dry, sour finish. nice flavors but it’s pretty sour. it has a full mouthfeel; appropriately carbonated. again, love the aromas here. you can tell it’s a great blend of older oak-aged saisons. the dry-hopping works. it’s just a little sour, at least fresh.
