Double Barrel Derivation has come in many different forms. From explorations in unique wine barrels, to being finished in exotic woods, to integrations with our favorite adjuncts. Double Willett Single Vanilla Derivation was brewed in February of 2021. Our O.W.K. recipe aged in Willett 5-year bourbon barrels until July of 2022, and then it was racked to Willett 4-year bourbon barrels for its final rest. At maturity, we racked the selected barrels to a bright tank where a blend of vanilla beans from Sri Lanka, Vanuatu, Madagascar and Mexico were waiting to infuse a complimentary amount of vanilla to our double barrel expression.

Charleston Chews on the nose transitions into smoke & whiskey-soaked oak. Palate w/ smoked vanilla, baking cocoa, & Raisinets. Perfect mouthfeel, with a smooth, warming finish.

poured from a gold-waxed 375mL bottle into a SP 10 year whiskey glass. pours a thick, inky black with a quick dark brown foam swirl that’s quick to fade away. huge bourbon presence on the nose with chocolate, vanilla frosting and oak in the background. as this warms the booze get stronger and the vanilla enhances the chocolate base stout. incredible. taste follows with vanilla and chocolate up front with a heavy hand of booze on the finish as well as dry oak. boozy, rich and decadent. thick, full mouthful. lower level of carbonation. this is incredible.
