Memory Palace is a dense, satisfying and complex adjunct stout that remains balanced and approachable. After brewing a deep, dark, and viscous base stout, we conditioned it on toasted coconuts from Sri Lanka, cardamom seeds from India, and Ancho chilis from Mexico. This smooth and rewarding sipper is evocative of rich South Asian chai or spicy Mexican hot cocoa.

Rich dark brown moist appearance with a generous tan head, good retention, and blotchy lacing. Coconut, chili pepper, vanilla, raisin, licorice. Medium to thick body, medium carbonation.

I know that Grimm is pretty hyped up in their local market, and I’ve only had one beer from them but it was pretty good. This one sounded very interesting, combining the sweetness of coconut with the earthy spice of chiles and cardamom. I’m a fan of spicy beers, so let’s see how this one holds up

Pours a very dark brown with 2 fingers of dark tan head that quickly fades to a thin cap and leaves decent lacing

The cardamom definitely takes the lead here in nose, carrying the other aromas nicely. I’m picking up on aromas of earthy cardamom, milk chocolate, roasty coffee, cacao, dried chilles that are very Thai-esque, and sweet vanilla

In taste, it’s a bit less earthy, and leans into more traditional imperial stout notes while still bringing in the adjuncts. On the front end of the sip I’m tasting milk chocolate, roasty coffee, light spicy pepper, and dark bread. The swallow brings notes of earthy and floral cardamom, cacao powder, sweet coconut, almond, and a touch of general spice

A full body pairs with gentle tingling carbonation, resulting in a slick and viscous beer. Finishes off dry with some light heat, which could definitely be more intense but the nuttiness takes its place

This one was good, just not great. In the nose the adjuncts work together, whereas in taste there’s not much going on. Oh well, it’s still a nice sipper

A real sipper - great flavors and a rich feel - the chili is not particularly hot - just adds a bit of tingle, but its mostly nestled in the chocolates... Coconut is mild - adds just a suggestion of milkiness and maybe almond... Favorite part is the cardamom, which has a nice earthy, herbal, rustic note - a sweet stout, full-bodied and a bit syrupy and sticky...

Pours a brownish frothy 1/2 finger head that fades slowly, decent lacing and legs, pitch black beer

Nose brings a ton of spice, cardamom explosion, some chilli pepper, a hint of cinnamon and baking spice, cocoa and choc ganache, a hint of mint somehow, little nougat and roast

Taste brings more dark malt, cocoa, little fudge and choc ganache, lots of cardamom again, generic baking spices, light chilli flavor but no heat, big cardamom and holiday spice, some bitterness from roast and mild spicy hop, again a mint like character, smooth alcohol, mild sticky sweet finish, more cocoa, cardamom and chili flavor hint of heat

Mouth is med to fuller bod, little creamy rich, med to lighter frothy carb, light warming alcohol

Overall eh, way too heavy on the cardamom, not much stout left, chili had a light flavor and no real heat, fair sweet in general, not too enjoyable

A: Squid ink. Minimalist mocha head.

S: Spiced holiday cake, Mexican hot chocolate, ginger carrots. Sweet and savory.

M: Full bodies, spritely carbonation. Warming sensation derived from chilis.

T: Harissa spiced pistachios, cardamom tea, ginger cake, rum raisins, smoky chocolate.
