an incredibly weird beer, but thats almost more of what i am looking for in a saison now than the generic pale wheat malt and french yeast, its nice to find something a little strange like this. apparently brewed with some sort of melon, i really didnt get a whole lot of that out of it. the yeast for me was the highlight, super dry, farmy and funky, rustic and complex, with lots of spice notes, particularly white pepper and oddly enough, mustard. not that gross yellow american mustard, and not the spicy stuff that goes on sandwiches, but maybe more of the mustard seed, or better yet the dried mustard, i swear thats what i smell and taste, especially towards the finish. maybe a product of the yeast, maybe a product of this curious melon, but its a distinct flavor in here for me. very dry and carbonated like champagne, its extraordinarily lively in the glass, and tickles the tongue. subtle grassy hops later on, some straw and wheat, a touch of funk, a waxy texture, esoteric herbs. the flavor here is a weird one, but the beer is impressive because its different and also very well made. definitely a bit of an oddity though...

Very pale yellow clear look, sharper smell akin to a honeydew, slightly tangy feel produced from the addition of sprite melons.
