Mashed with local barley from Riverbend Malt House of Asheville, North Carolina and flaked oats. Fermented with our clean and crisp house saison yeast blend. Injected into the fermenter with 300 gallons of fresh pressed apple cider from Perry Lowe Orchards of Moravian Falls, North Carolina. Fermented again on the cider until bone dry. This quenchable fruit beer is the perfect beer/cider autumnal crusher.

Decanted from a 16 oz (473 ml) can into a conical pint glass; no production information.
A: Pour a somewhat hazy, bright yellow color with an initial three finger, white to lemon chiffon head, excellent (one finger) retention, but no more than soapy lacing. Gorgeous head formation.
S: Tangy/tart. Aromas of delicious apple, clove, lactate, and cracker/cookie.
T: Tangy and at least semisweet. Flavors of apple/pear, clove, toffee, and cracker. Very light bitterness imparts a pepperiness.
M: Light to medium bodied with robust carbonation. Drinks creamily, smoothly and cleanly.
O: A subtle and delicious blend of cider and beer elements. I thought this was very crushable and would not hesitate to have or serve it again. Rare I really entirely enjoy something with cider elements, but really did in this instance.

Appearance: A light, pale yellow-hued body, a touch of haze and a thin, white head.
Smell: Soft bready barley, a little oat pottage. Lightly phenolic, a bit of perfumy clove, some white pepper and camphor. Relatively subdued apple presence on the nose.
Taste: A tangy, yeasty taste, upfront. Minimally sweet. Barley and pressed oats. Gently piquant, pastoral yeastiness yields earthy spice and some aesculapian balm. Pleasing apple component to give you the implied fruitiness, juiciness and tartness while eschewing the temptation of hanky juice box sweetness, instead going for something drier, more refined.
Mouthfeel: Medium-light body. Well carbonated.
Overall: There're not many good apple beers. Well, there're not many apple beers, in general. This one's pretty decent, though.
