“ Collaboration with Graft Cider.
Oak Aged AleWith Balaton Cherries, Juniper Berries,
Lime Leaves & Orange Peel.
We took the standard collaboration playbook and flipped it on its head to make it a true 2-way partnership. After deciding on the recipes, we exchanged house cultures from our respective oak foeders. We used their cider culture to ferment our foeder aged beer, while they took our beer culture to ferment their foeder aged cider.”

This is a really interesting one that I just had to grab when I visited Proclamation earlier tonight. The combination of adjuncts makes it seem like it’s emulating a fruity and herbal gin cocktail. Let’s crack it open and see what it’s all about
Pours a cloudy reddish orange with 2 fingers of dense off white head that slowly fades to a ring and leaves decent lacing
It’s very tart and vibrant in the nose, I really dig this. I’m picking up on aromas of lemon juice, tart cherry, juniper berry, cherry pit, lime zest, wet hay, crackery malt, sharp oak, light honey, and orange zest
The fruit isn’t as up front ub taste, focusing on more of a balance with the herbal notes. On the front end of the sip I’m tasting juniper beery, wet hay, black cherry, wildflower honey, lime zest, crackery malt, and orange zest. The swallow brings notes of orange zest, juniper berry, white pepper, cherry pit, mint, lemon juice, sharp oak, crackery malt, and wet hay
A medium body pairs with gentle tingling carbonation, resulting in a sharp beer. Finishes bone dry and refreshing
I was expecting something unique with this one, but honestly didn’t think it would be as good as it is. I may need to get some more
