SMOL is a small saison, which is a contemporary interpretation of the low alcohol beers of Belgium and France. Born of a simple grist, highly hopped, and open fermented, SMOL is built to refresh. Bottled 4/26/21. Blend 1. Enjoyed just under 6 months out.
Pours the color of gold spun straw with a billowy cap of foam.
I get lemony notes with a light floral character on the nose. Some barnyard funk too. Lemon dominates on the sip, like a salted, preserved peel, along with a light, funky note. Some white wine grape comes through too. I get the jasmine as well. Delicious through and through.

It’s pale golden, hazy. The foam is very fine and neatly seat together like champagne, lacing on the glass. It smells dry and spicy, white pepper, grain, rye, dried ginger. The beer is very tart, lemon acidity. It’s quite dry, dry and tart. There’s bitterness behind the tartness, but hidden pretty well, mostly just feels the tart flavor. The beer have grain, malt vinegar, Granny Smith, lemon juice aromas. It has some diesel like hops trace, but not straight to your face, there’s some dried lavender flower’s aroma in this beer too. It’s simple and elegant, very interesting.
