High-abv dark farmhouse ale fermented in oak with Montmorency cherries and a mixed brett culture. Clocking in at 9.7% ABV, Tower of Babel was fermented in fresh red wine barrels from our friends and neighbors at Ward Johnson Winery as well as two second use bourbon barrels. The beer was aged for 6 months and then the wine and bourbon barrels were blended at the time of bottling.

From a 750ml bottle.
A - Dark burgundy, opaque, minimal light red/pink head
S - Cherry pie, sour cherries, a little leather and chocolate
T - Sweet, similar to the nose, some tannin from the wine barrels, a little bit of earthiness as well, some vanilla/chocolate from the bourbon barrels.
M - full body, silky, moderately carbed.
O - Delicious, the wine barrels and bourbon barrels blended together add some unique nuances to this beer. It's fantastic now but I think with some age it's really going to be something special.

Dark brown color with dark orange around the edge. Cherry smell and taste was present but not overpowering, it was nice. The red wine adds a bite to the flavor so if thats your thing this is great.
