Canned 8/26/16; drank 8/28/16 @ the Yarchives.
Opaque orange/yellow appearance.
A rough pour yielded a huge, noisy bright white head; decent lace.
Fresh flowers, banana & faint ginger notes in the nose.
Medium mouthfeel.
Banana, fresh flowers & soft vanilla flavors up front; faint lemon notes & dry clove notes on the finish.
Complex & tasty; this will never be my favorite style, but I'd have another.

This is a good rendition of a difficult style and proves the versatility of The Hop Butcher For The World; best known for their hopped-up ales.
Here's Looking at an intriguing orange-ish ale that, unfortunately, offers mild and hard-to-distinguish scents. More masterful are the rustic Tastes that are balanced; but are not stimulated like the best Belgian yeasts cultivate.Nor have my buds evolved to the point that dry-hopping saisons is my preferred method of spicing. That said, Paris is a good effort; but hops do not make the saison... yeast makes the saison.
In the hierarchy of humorous names for beer and matching/thoughtful artwork, Hop Butcher might be in my top 5. For that, I give them an Overall hug.

i think its funny that people can rave about the hoppy beers these guys make as being of such fine quality, and then basically ignore this one, it makes no sense. this is every bit as well refined and professionally done as anything i have ever consumed from them, just in a style thats obviously a little less sexy and trendy right now. this is really exceptional beer though, flavorful drinkable, and most importantly for me in the style right now, interesting on the fermentation side. its clean, only lightly funky, but still has a rustic charm about it, a french type saison yeast i am guessing, but done cool enough that this doesnt get overly estery or vinous, a smart call. its dry hopped with hallertau blanc which smells and tastes like clementines and honeydew melon in here, a perfect hop complexion for this yeast and almost entirely without bitterness. its also made with lavender honey, which pops in the aroma and works in well with the lighter malt build in the flavor, never sweet but i can definitely taste the honey and the flowery lavender. its delicate, not forced, and the yeast is first still. awesome carbonation, crackery pils type malt even in front of white wheat on the grain side, and then the lavender, the honey, and the hops all at once. beautiful beer, i would choose this one over many of their hoppy beers, as sacrilegious as some might think that decision, its true. i loved this!

Had on tap. The nose is full of lavender, honey, wildflower and the trademark hop bitter of the nelson sauvin hop. The taste is not as balanced, resulting in it tasting like grandma's cabinet with way too much lavender. Feel is a touch oily on the finish and the carbonation is strangely present.

16 ounce can into a tulip glass. Had 10/3/16.
Pours a bright yellow, slightly hazy, with a one inch head and some soapy lacing. Smells of Belgian yeast, lavender, malt, an earthy hop aroma, light black pepper, a little hay/straw. The taste also leads with the yeast, the Nelson Sauvin hops- more prominent than the nose, light malt, a little lavender, grapes, light white wine. Smooth, decent body, appropriate level of carbonation.
The lavender and Nelson Sauvin hops are solid additions, although they compete a little for attention. Nice aroma and flavor, could use a fuller body. Good effort, but overall needs a little more intensity. Worth a try.

Aroma is fairly nondescript, some light toasted grains, vague phenolic saison yeast.
Some noticeable lavender and sweet florals as it warms.
Taste is lightly bitter with a phenolic pepper spiciness, not getting much Nelson character.
Soft herbal and grassy aftertaste. Light to medium bodied with even carbonation.
Overall it's alright, not the most distinctive Saison.
