Mixed fermentation spelt farmhouse inspired ale barrel fermented in freshly dumped red wine French oak barrels for 12 months. We blended the barrels together and allowed the blend to condition for 4 months in the bottle. The results are truly amazing. Beautiful minerality with characters of bright and juicy pear, dried lemon peel, delicate aromatics of vanilla and fresh flowers, with an elegant/restrained acidity.

Foggy burnt gold with a lightly fuzzy head.
Toasted wheat, grass and dusty funky oak pairs with pickled orange peel and grapefruit. It's pretty sour via a crisp expression, while somewhat spicy, semi-bitter brett pipes up before the dry finish. At second visit, there seems to be a bit of a green hop and burnt rubber note in the background. As it warms, the beer overall develops into a lemon-lime flavor.
