Introducing Permutation; our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our production crew.
For this second edition, we present a delicate and refreshing dry-hopped grisette pale ale; a light bodied, dry, highly aromatic farmhouse beer with a slight brett funk. The grist consists largely of pilsner and dinkel wheat (spelt) as a base with a touch of rye malt for some spicy character. Citrusy hop-driven aromas of lemon and lime take the lead with similar flavors following through on the palate. Initial fermentation duties carried out by a characterful saison yeast, followed by further innoculation with a fruity brettanomyces strain to add complexity and balance.

cracked on Zach's wedding night 8-18-18 because hehelped brew this.
Was surprised by how well balanced it was. Help very well. The sour wasnt overpowering the fruity character remained there too. Hops weren't terribly precievable, but the malt backbone still carried through a nice fuller finish than expected. Bubbly and crisp, with little loss of carb

Light, effervescent, tart, funk. Outstanding beer from Trillium. Enjoyed from their cellar (aged ~5 months). Beautiful, straw-gold pour with a lively stream of bubbles rising to the bottom of a puffy white head. Aroma of grape must, lemon, green apple and some peppery spice. The taste brings the funk and it's both balanced and subtle; nothing too horse-blanket about it. It adds a layer of complexity to the cascade of flavors: tart, rye and funk. Drinks crisp and dry like a barrel-aged ale with no lingering bitterness and sticky sweetness. Just a gem of a beer. Hana hou!

Pours cloudy hazy straw yellow with a frothy white foam head. Smells like tart lemon, lime, orange citrus, vanilla, toasted hay, barnyard funk, white peppercorn, malty grain, rye spice, some pineapple, tropical mango, with earthy herbal grassy pine. Tastes like tart lemon, lime, orange citrus, vanilla, toasted hay, barnyard funk, peppercorn, malty grain, rye spice, some notes of tropical mango and pineapple, with earthy herbal grassy pine. Feels medium bodied, creamy and crisp with moderate carbonation. Overall a real nice and refreshing hoppy spelt grisette pale ale.
