This Belgian-style Saison was fermented and then conditioned in a large oak vessel known as a foeder. Notes of spice, hay and clove are accentuated by a slight oakiness and dry finish.

Carried this can from the curb at Beermiscuous... my go-to store for Chi micros probing into the Belgian styles.
I tried several Hopewells and was not that impressed, back three years ago, when they were experimenting in the Belgian styles. But they have advanced, based on Foeder; and I should revisit their beers and, eventually, their taproom in the New Normal.
Foeder has a welcome clarity in a cloudy style and sufficient (tho not great) foam. Smells are well above average, blending fruity esters and mild tart. To this balance, Tastes add spice from the hops and yeast. So Hopewell seems to control well the art of Belgian yeast and the vagaries of the foeder barrel. Finishes nicely refreshing; softly cleanses the palate for more ratatouille at lunch.
Sorry for some of the tougher early reviews. I'd like to think Hopewell was listening. But apparently they were learning fast what the Belgians took centuries to develop... and innovating in a Midwestern sort of way. I'm looking forward to more.

16oz tallboy can poured into SP stemmed balloon glass. No canned on date.
Appearance: Pale / dull golden bodied beer with bone white head. Pours a big tall head with spotty lacing left behind.
Smell: fresh baked bread and wet hay in the malt profile. Nice mineral water aroma. Clove and white pepper spice. Fruity esters with a hint of banana and bubblegum. Light musty funk.
Taste: Lightly sweet and lightly funky. Musty hay. Light orange citrus flavors. banana, bubblegum, and fruity yeast in the middle. Finish has a slight oaked sweetness to it and slight clove spice note.
Mouthfeel: medium bodied beer with moderate carbonation levels. carbonation is creamy. Lightly dry finish. Very drinkable. The alcohol is not noticeable.
Overall: Really nice saison. Not quite Saison Dupont good, but it's going for the rustic Saison vibe. Not much tartness to this beer. Enjoyable saison for sure. 4 pack of 16 oz cans is a good format for this beer. Reasonably priced as well.
