funky tart mixed culture wild saison type, oak aged, and using local grain and hops, which rules, didnt think hops grew down there? anyway, its a fun beer, maybe a little too sour to drink a ton of, but unique enough to stand out and with a cool funkiness to it, nice and mature but also light and springy still, i do get some hops in here. blonde beer with light haze, short white head from the bottle, but fine carbonation in the beer. the nose on this is lemony with white vinegar acetic character as well, but not like scalding or anything, just prickly, drying, with a newish oak and white wine layer, green olive and brine to me, caper or something, and some lushness and also bitterness from hops, but juicy too a little bit, lime and lemon, sauvignon blanc grapes, mild coriander, neat if not quite to where the best of these get, more bacterial than it needs to be, at least for drinkability. the flavor is sharp and interesting at the same time, tight underripe green fruit, pear, grape, gooseberry, white currant, green apple, almost pithy and drying, some hoppy brightness is pleasant with this, very sour but also with cool funkiness to it, a good amount of oak, lighter medium body but fine structure, the local barley is less an influence than expected with the prominent fermentation here, but its good. lemon and minerality at the end, appreciable hops, and maybe a whisper of white pepper or something grounding it. id love the acid to be toned down slightly, but this is a nice effort, and this is a brewery doing some very cool things. glad to have had the pleasure!

I enjoyed this at the brewery in April, 2025. I did not make a note of the variant, if any, as I hadn’t realized there’s possibly been multiple iterations of this over the years.
This one’s a winner! Funky, tart, with some stone fruit notes. It threads the needle with a touch of acidity and a lasting finish, approachable and layered.
