Appearance: Clear and effervescent golden yellow, with a mountainous plume of fluffy white head with an outstanding retention, and leaves behind smattered patches of lace all around the glass
Aromatics: Fresh and airy with light resinous pine and grapefruit, some tart farm yard smells; light scents of rained on hay and barley grass floating through on a gentle breeze.
Taste: Tartly sweet, like freshly squeezed white grapefruit juice and mild white vinous characteristics. Its the right kind of balance I like in a sour - it is sour, and tart, and puckery with just a note of sweetness to entice you back for more.
Mouth: Clean, fresh, fizzy and moderately puckering. Wonderfully clean and dry finish, the gentle sour sweetens up at the very end before it quickly blinks out of existence.
Overall: I waited to try the Centennial Yalla Yalla (which I had right after this one) I wanted to see how similar they were, and to give it fair shake, as I imagined both were going to be close and I didn't want to +/- anything that shouldn't have been. Overall, this was a truly great farmhouse sour
Pairing: This is one of those nice smooth rolling sours where the flavour doesn't confuse or complicate the palate. And I think overdoing it with something too savoury or fatty will muddle it up. I feel this is a good time to just enjoy some fresh fruit - grapes, pineapple, melon. The juiciness will blend right in and some of the acid and fructose will play nicely and maybe even pull a little more of that sour out. Like taking a cold shower before jumping into a pool so the water feels really warm... I'm hypothesizing that popping a piece of sweeter fruit with make that sour pronounce a little bit more. Just a theory, I'm going to actually try it I think - thankfully I had two bottles of this one!
