From the soils come the spoils

For our take a a Bière de Miel we opted for a simple grist of locally grown and malted grains, an abundance of wildflower honey from Stonewall Apiary (Hanover, CT), fresh lemon peel and a careful addition of rosemary from Cold Spring Farm (Colchester, CT). Following a period of aging in an oak foeder, we bottle-conditioned using yet another addition of local honey. Prepared with an eye towards warm weather and warmer welcomes.

Crystal clear gold pour with a modest white head. The nose owes more to the one part wine barrel aging than it does the two-parts bourbon barrel aging. This is a saison-type biere de miel and the honey does give it a just-right sweetness. This is beautifully countered by adding lemon peel. Added bonus is rosemary flavor. Take a sip and feel the rosemary fumes cruise up into your sinuses. Lovely beer, brilliantly brewed.

Pale, golden yellow body, hazy; thin yet lasting white head, soft and spongy. Beautiful aroma of lemon and lime, saffron and dandelion; just a hint of brett funk. The taste comes across as a fuller, earthier take on the aroma; moderate citrus notes, primarily lemon; sage; very mild bitterness undertone. Medium-heavy body; soft and bubbly on the palate; moderate acidic bite; light tartness and dryness.

This is a fantastic old style beer - Bière de Miel. Per the label, this is intended as a warm weather beer, but, damn, if it isn't just as tasty into early Winter and sitting next to a Xmas tree. Per the bottle label, honey and rosemary from Connecticut are used in its creation plus it was aged in an oak foeder. All I know besides that is that this beer is still refreshing and quite enjoyable to drink.

750ml bottle served in a tulip. Gift from a guy I chatted with at a beer bar. Brought it home in a suitcase. Batch #3, bottled January 2021.

Pours a lightly cloudy bright yellow color with a small head. Smell is bright floral/funky, definite green plant overtones and lots of lemon. Spices are evident, although I probably wouldn't have name rosemary if it wasn't on the label.

Taste is leaning in the lemon direction with a moderate funk and a light crisp citrusy tartness, I wouldn't even pick out rosemary as a flavor on its own but you can tell it's there accenting the other flavors and offsetting the sweetness.

Mouthfeel is super light and clean. Overall, this is really nice.

This is, quickly simply, a phenomenal sour.

Oaky and very sour, with notes of leather, tannins, lemon, citric acid, and honey. Crisp and clean, with a medium finish.

This is as good a non-fruited sour and funky farmhouse ale as I’ve had in ages.

Batch 1 bottled Jan, 2019. Really nice looking beer, highlighted by plenty of dense white head. Aroma is lemon and funk. Taste follows the nose with lemon up front, then noticeable but not overwhelming funk on the back-end. Feel is bright and lively. Good beer.
