this is a really great beer, my first from these guys but it has me wanting more, thats for sure. it is still unclear to me whether or not these guys actually make wort, or if they are just fermenting and blending it, not that it matters, but knowledge is power. this one is a wild wit type, but seriously it smells and tastes like a lambic blended with a wit, the fermentation aspect of this is incredible, funky and sour alike, well musty and mature, established brett and the right amount of acidity, seemingly fully wild but oddly familiar for a coolship beer from a place i havent had much wild beer from. orange and chamomile in here too, real subtle, and smartly so, i wouldnt do anything to cover up any of this awesome yeast complex, no way. vinous white winey elements, lots of new tasting oak, faint vanilla is nice with the oranges, the aged hop element adding even more of a lambic vibe to this. it doesnt taste like belgian yeast to me though, which of course is what i always think of with wit types, but the wild aspects are amazing here, and i dont want for a more conventional yeast profile. subtle lemon from the bacteria is nice with the orange, and overall this is as delicate as its clearish thin golden appearance suggests. not as carbonated as it could be, but i dont even feel right being critical here, this is so good. exceptional stuff overall, both clever and expertly done, a way too rare combination, and a cool liberty taken with a classic style. definitely in the market for some more beers from these guys after loving this one!
