A collaboration with Averie Swanson of Keeping Together

Beer is community. Back on May 27th, a team of likely friends gathered in an unlikely location to forage dandelion blossoms for Equilibrium’s first collaborative brew with the beer community. A special thanks to Mike O’Brien for sharing his beautiful field with us. Unlikely Foragers is a farmhouse ale brewed with dandelions and Equilibrium’s farmhouse culture. The younger beer was blended with threads of aged Austin for added depth and complexity and bottle conditioned for months. The beer pours a deep golden color with a light head releasing aromas of tropical lemon, floral dandelion, light funk, and bright hay. The taste is dry with a nice white wine minerality and a gentle tartness to stimulate the pallet all integrated in a balanced drink. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

Poured from a bottle (Oct2020) into a Belgian glass

L: pours a moderately turbid light yellow gold with a very large fluffy white head (large bubbles). Moderate visible carbonation, head fades after a couple minutes leaving some moderate lacing

S: restrained funk on the nose, wish there was a bit more to it. Slight tart aroma, get a bit of lemon (more after I’ve had a sip and look for it than I did off the bat), some apricot as well. Opens up some more in the glass, in a… bad way? It’s more that sour cheese funk, not quite digging it

T: nice lemon-forward flavor, lots of lemon flesh a bit of zest as well. There’s less of that farmhouse/grain bill character than I expected, more fruit with a lactic tart/sour note. As it’s warmed the flavor gets a bit more earthy, flavor moves from pleasantly astringent to negatively bitter. Some of that sour funk from the nose coming through here too

F: high- carbonation, medium+ body, less drying while cold but becomes a bit aggressive as it’s warmed, more full mouthfeel (find it lightens as it’s warmed, feels highly carbonated)

O: weird experience with this one - flavor is a bit one-dimensional, opens up somewhat as it’s warmed but not sure it improves meaningfully. Always like breweries expanding their offerings (especially w/r/t saisons!), hopefully Equilibrium can dial it in

Poured from a 750 bottle into a nonic. I'm getting an eighth of an inch of white head on top of a hazy golden body. Reasonable amount of carbonation moving upward at a medium pace from bottom to top of glass. No problem.

Very yeasty nose. I guess I'm getting faint lemon, also quite a bit of aroma one may get in a farmhouse all. Yeastiness is overpowering. Unideal.

Like just about every beer the taste very much follows the nose. Lemony sourness and farmhouse flavors jump off the page. I know what dandelions smell like so I guess I know what they taste like, I guess it could be said that they may be causing this strange flavor. Really I'm getting destroyed by the overpowering yeastiness of this beer. Zero alcohol detectable which I guess is to be expected in a 6% beer.

Highly carbonated, exceptionally crisp, light in the mouth. I fend this to be pleasant and probably the best reason to drink this beer.

Strange concept, average execution. Beer is not offensive but is not worth a look and certainly not worth a repeat purchase, in my opinion. Not revolting or repulsive but do not recommend.

Foggy burnt yellow-gold with a fizzy white head quickly dying to nothing. There's a surprising amount of ugly, creamy puke tan sediment around the rim of the bottle.

Tart apricot, lemon and green apple pair with nutty funk and softened wet oak, which is particularly present in aroma, like cashew paste. The barely detectable mild herbality is not really giving off a noticeable dandelion character. However, there's a funky cheesiness upon first coming out of the bottle that is a little too close to vomit--thankfully that recedes.

The crisp tingly medium-light body finishes semi-dry.

Very solid beer. Tastes a bit on the lemony side for me, but it grows on you as you drink it. I think it will mature super well. Bottle art is also very attractive. Solid offering!

On tap at Tap and Mallet in Rochester, NY.

This one pours a clear light orange color, with a small head, and no lacing.

This smells like honey, sweet floral aromas, lemon, and hay.

The dandelions surprisingly come through very strongly here, with a sweet and pleasant floral funk here. I also get some honey, and also some candied lemon.

This is light bodied, with a lower level of carbonation, and a good level of drinkability.

This kind of feels like a lighter version of Vera Mae. It's quite nice.
