The Vanilla Gorilla, a white hybrid leopard cat with stunning blue eyes, oversaw the birth of Equilibrium’s beer program in Pete’s basement. He is the neutralizer of all things excessively elevated, and Pete’s best friend. To pay tribute to this pillar of Equilibrium, we aged Special Relativity 1 for more than eight months in @hillrockestatedistillery Bourbon Barrels that were filled with hand-cut Madagascar Vanilla Beans. The Vanilla Gorilla opens up with huge notes of vanilla, marshmallow, oak, burnt sugar, dark chocolate, coffee, and bourbon. Its flavor follows the aroma with a full viscous body and a smooth vanilla-chocolate-bourbon palate linger that warms the soul like a loved-one’s hug. This beer should be served near room temperature to enjoy the bouquet of complexity that went into its creation. This beer will cellar well at proper temperatures. The label art for Vanilla Gorilla was created by local illustrator, Julia Green (@juliagreenartistwhosings).

Reviewed on the day after bottle release. Served at room temperature consistent with the brewery's suggestion. Poured into a commemorative tulip glass. It pours as black as night. There was quite a bit of effervescence as the bottle opened and the bubbly, light mocha-colored head disappeared within seconds, which is disappointing. The nose is bourbon heavy along with vanilla, burnt coffee, chocolate, brown sugar, oak, tobacco smoke, and char. It's a fragrant pour. Wow, is it flavorful! The bourbon up front blends seamlessly into roasted malt, rich dark chocolate, and strong black coffee. There are also notes of vanilla, oak, brown sugar, burnt peat. As the various flavors melt away there is another dose of bourbon at the finish. I think the taste improves as it settles in the glass. This stout is rich and viscous in mouth feel. Despite the initial effervescence it's moderately carbonated and because of the prevalence of bourbon it seems boozier than the advertised 12% ABV. Sip this on at your leisure. Overall, it's a superb BA Imperial Stout with tremendous flavor and a delightful mouth feel. According to the label this Stout is dedicated to the brewer's beloved cat; and it certainly is a loving testimonial.
