People have asked over the years why hasn’t there been a base Austin? The answer simply is it hasn’t been ready yet. It plays well with fruit and oak, but it hasn’t been ready as a standalone. Like our stouts, we’ve been working hard behind the scenes to create a reproducible process that produces a beautiful and elegant farmhouse ale that is dry, slightly tart, full of flavor, and super drinkable. The interplay of our slow souring process, its respective microorganisms, hops, bitterness, gravity manipulation, and minerality has been through countless iterations over the years from different engines of Casey, Fruited Austin, TABA, DH TABA, and we’re pleased to announce that after years of RnD we finally have it dialed in and base Austin is ready. This ale while deceptively simple is one of our largest accomplishments to date. Austin has a similar elegant acidity of our recent DH TABAs, similar final gravity, but uses completely different microorganisms for fermentation, different hops, and hop process.
Austin is a farmhouse ale built by the inspiration to share beer with people close to heart. It is pale, tart, delicate, and complex with a bit of pleasant funk. This beer is unfiltered, unpasteurized, naturally carbonated and will continue to evolve over time if properly cellared.

750ml bottle. Date stamp on label is '03/21'.
Somewhat cloudy, pale gold colored body. First pour brings forth a three finger white colored head, and this maintains as a full cap and higher ring. The final pour of dregs cloud up the clarity. Leaves behind a few short lacing strings.
Aroma of citrus lemon, pear, and mild yeast funk (Band-Aid).
Taste is more tart than suggested by the nose. Flavors of lemon, pear, peach, and apricot. Late expression of dry yeast, which leads to a dry and fruity aftertaste.
Medium mouthfeel. Tart fruit and yeast makes for a clean and dry finish. Very good carbonation with a long lasting small area surface storm.
Easy drinking, fruit flavors, and dry finish make for a good table beer that is an excellent brew for food pairing.

Appearance: Pours an almost clear golden color with a one finger head; decent retention with a splattering of lace
Smell: Tart green apple and funk with a strong mineral tone and a hint of lemon pith
Taste: A funky mineral tone opens the profile with green apple and a hint of lemon pith emerging; the funky tartness increases, after the swallow, and brings along a rather dry finish
Mouthfeel: Light to medium body with low to moderate carbonation
Overall: Although the mouthfeel is not ideal, the flavor profile here is spot on for a farmhouse ale

Pours clear yellow with a white head on top. Smell is of wild yeast and sour. Can taste some kind of crisp white fruit and no sourness. Honestly not what I was expecting.

Poured into a duvel tulip glass.Pours a hazy gold with little head retention .Smells of citrus fruit,oak ,some barnyard funk.Taste is the best characteristic of this beer.Reminds me of beer with lemonade.Medium light body with minimal carbonation.Taste says lemon,grapefruit,pear with a dry finish.A perfect warm weather beer.

Pours cloudy amber with two fingers of pale white foam. Big lime zest in the nose, light sour apple and funk notes with flowers. Taste adds lemon, minerals, and faint dry hay. Feel reminds me of afterthought saisons but dryer and thinner, tartness and funk are felt the whole sip and it is glorious. Pale complexion overall. Liked this better than some of the fruit variant I have had to date.

Appearing not unlike a crisp lager, it's a clear sparkling gold but with a very tall white foam head whose large bubbles allow it to collapse under itself, creating a fizzy film and leaving spongy lacing behind.
This reminds me of a slightly more tart Arthur. The fruity components are passion fruit and apple, while the funk and spice are pleasantly mild of barnyard hay, straw and an emulation of mild white oak. An herbal character leans this overall semi-bitter, yet an accent of honey comes out in the aftertaste.
The body is medium-light and satisfyingly crisp yet fluffy, finishing semi-dry.

Pours a pale hazy golden with white head. Musty lemony funk. The citrus tartness is there upfront along with some tropical funk. But there is a steady malt backbone that provides a grounding to this beer that prevents it from giving way too much to that tartness and acidity. On that note, the acidity is quite restrained. Definitely reminds me of several well known saison producers who err on the delicate side of presentation. I must say this turned out very nice.
