A collaboration with Averie Swanson of Keeping Together

Our first Solera beer, which uses fractional blending to generate an ale with a unique distribution of aged components. Every future batch will always have a part of B1 in it and the average age gradually increases over time with each blend, which will add an evolving complexity as the memory packets harmonize with the foeder oak and mixed culture of microorganisms. Keeping Memories pours a golden straw yellow with aromas of bright lemon zest, floral fields (that aren’t covered in 2 feet of snow), and a soft touch of oaky vanilla. After breaking through a creamy head, you’ll find crisp flavors of soft lemon, complex stone fruit, lime, grass, and vanilla oak in a creamy mouthfeel and a dry finish. The beer is elegant with a balanced acidity.

Gold, slightly hazy. Not foamy.
Funky.
Apples, grapefruit, grass, slightly spicy, and maybe some vinegar(?)

I liked this one quite a bit...

Really nice and dry and crisp...there's a little funkiness but it doesn't overwhelm... a pleasure to sip and enjoy...

Earthy and delicious...

Very enjoyable offering...

A: slightly hazy copper, yellow, and burnt amber with a 1 finger silky off-white head

S: big hit or barnyard funk and lemon juice upfront. Grass, hay, huge note of pears and tart green apple skin. A bit of apple cider vinegar along with some sweet grains and a bit of malt sweetness. Some earthy hops at the close with a bit more sweet citrus

T: tart green apples and pears. A bit of that band aid funk along with some sweet grains and grass. Some tart lemon along with some candied lemon. A bit of sweet citrus hops as well as some nice peach juice. A bit of coriander and cardamom spice. Finish is green apple skin

M: lighter side of medium with high carbonation

O: easy to drink with a touch of tart. There’s nothing off-putting in here and it’s well-harmonized, but I think it’s lacking a bit of spice. I’d trade more of that traditional Saison spice for some of the tartness that’s in here. Not bad at all, but not the best Saison I’ve had

Pours a hazy golden with soapy white head. Retention isn't great. I'm getting some grapefruit flesh and peach along with Bretty funk on the nose. This is a "solera foeder farmhouse ale" for those asking at home. A collaboration with Averie Swanson's Keeping Together. It's very stonefruit forward. Getting a lot of peaches. It gives way to honey sweetness and kind of a honey nut cheerio note. It's super juicy and the THP note only shows up faintly, but it is there. I enjoyed this one, but it wasn't flawless.
