I am just now realizing this is ky first review of an Equilibrium beer. I’ve had a few before at work parties, but I had assumed I already reviewed them. Well, it looks like I have some work to do. Anyhow, this one sounds real interesting and right up my alley as I love my Saisons with a bit of funk. Let’s pop it open and see what it’s got
Pours a cloudy dark gold with a finger of white head that quickly fades to a ring and leaves minimal lacing
The nose delivers a wonderful balance of tartness and earthiness. I’m picking up on aromas of tannic white wine, wildflower honey, pear skin, petrichor, wet hay, white pepper, lemon yogurt, light funky cheese, and apple skin
It goes more into the earthy territory in taste, especially on the back end, but it’s still really solid. On the front end of the sip I’m tasting lemon zest, apple skin, tannic white wine, bready malt, wildflower honey, wet hay, and earthy wheat. The swallow brings notes of earthy wheat, straw, pear skin, wildflower honey, lemon yogurt, white pepper, and white grape
A medium body pairs with moderate carbonation, resulting in a crisp and refreshing beer. Finishes dry and very earth
Oh yeah, this one is great. Even for leaning into the more traditional Saison notes that I don’t typically love, this one pulls it off wonderfully
