String Theory uses a very special version of our farmhouse mixed culture, white wheat, and strata hops to bring you elegant layers of complexity with a balanced acidity in a can. It is extremely drinkable with zero residual sugars and very low carbs. String Theory pours a light straw yellow releasing notes of bright hay, lemon zest, sour dough bread, grass, floral citrus, and Anjou pear. The finish is crisp and dry with a beautiful balanced acidity and lingering minerality making it the perfect companion for a night with friends, day hikes, the craft-curious drinker, and wine drinkers alike.

6 oz draft pour at Lures Bar & Grille. Pours a pale yellow with a thin fizzy head. Aroma and flavor feature sourdough (kind of unique but weird), citrusy hops (lemon, lime), and light wheat. I'm not digging the combination of light/watery wheat and sour. Meh.

Aroma is spicy Belgian yeast, grainy malts and a hint of tropical fruit. The flavor is citrus/lime, malts and a tropical/spicy Belgian yeast/hop finish.
