Very similar to Gilman's Maison de Champagne (which I follow with a review) and which I drank side-by-side.
Drank on tap at their Berkeley brewhouse while eating their Brussel Sprouts and the pairing was good for a number of reasons. But the key one was the Sprouts had significant salt and vinegar; and this Saison salved my palate.
Gilman's Saison has a healthy foam and stays active for the meal. I also give points for their label that has a Van Gogh-like background of field. Nice touch for a saison. Smells are mostly tree fruit: apple, peach, some lemon. While a sophisticated yeast makes this saison, Tastes are balanced with just enough hops and no more; good for a malt-head like me. Medium-mouthed and bubbly enough to cleanse the palate; but this Saison is still kind enough to let the food work. I also had some of Gilman's pizza and the brew showed the same gentleness. This is a good table ale and I wish I could have it more often.
Gilman, in general, I'd like to spend more time with over-time. They are a good saison house now and if they continue to cultivate this fine a yeast, they will soon be very good.
