If I get a handful of pleasantly surprising saisons a year, I've had a good year. This is one of them
And I try more than I should. I drink every new saison I see.
I also do not mind making the first review for a saison that is this surprisingly good.
In part, I am surprised because Waypost found (or cultivated) a very good yeast.
Not only do they have the yeast, but they have the terroir right. They make wine in Michigan's wine country.
And they make a potentially great farmhouse ale. This Saison Sauvage Looks the part, color and initial head (although some lace and swirling protein will make it better.) Smells are consistent with the style, although a bit muted from the masters (more fruit !) Aromas tell me some wine also is coming. Tastes confirm all this and adds some tartness that adds to the complexity. Finishes wonderfully dry. Some big OA Hugs for the terroir. I hope I find more from Waypost.
