Will Be - Saison brewed with Spelt and Triticale conditioned on Brett
Will Be, is our flagship saison brewed with spelt and triticale. Will Be is the purest expression of what we believe about brewing and who we are as brewers. Nuance, balance, and complexity. Curiosity, technique, and constant improvement.
Look for notes of mango, pineapple, white pepper, lemon zest, brioche, almond, and peach pits with a taught yet lush body and vibrant, zippy carbonation.

Bright yellow. Aroma is yeast, lemon, and white pepper. Taste follows nose. Body is light. When I had this on tap at the brewery I found it to be too watery. This time I got it in a bottle and thought it was much better. Go figure.

Pours hazy pale yellow color, about a centimeter of head, settles to a millimeter skin. Smell is very funky, bright stone fruit, smells really nice.
Taste is soft, funky, creaminess, not much of the fruit I got in the smell.
Mouthfeel is fluffy with a little bit of a chalky texture. Overall, very nice beer.

Taste is soft, funky, creaminess, not much of the fruit I got in the smell.
Mouthfeel is fluffy with a little bit of a chalky texture. Overall, very nice beer.

Will Be gives insight into why the saison has become so popular recently among American micros.
First as saisons allow, Will Be uses unusual grains: spelt which is an ancient wheat and triticale which is a recent hybrid of wheat that has the heartiness and spiciness of rye. This creates a subtle base.
Second, saison yeasts are accenting citrus fruitiness... of which Will Be highlights.
Third and perhaps most important to judge the quality of saisons, Will Be goes with many foods. It went well with a variety of appetizers, it cleansed my palate of the salad's oil and vinegar, and it paired great with the eggplant parmigiana.
I understand from the owner of Off Premise (where I bought Will Be) that these brewers left Pipeworks to find their new bliss and are using excess brewing capacity at Marz. I went on their website and it is still a landing pad.
Good luck to them and I hope to sample more of their saisons.
10/2/23 Four years later, Will Be is released again (actually, August of '23) and I buy it again from The Beer Temple. I have to think this is a different enough brew that there should be a vintage distinction... after all, whatever is left in the fields makes the malt... and Is/Was has learned more than some brewing lessons over four years. But for now, let's go with what we got. Bottom-line rating: I'm less impressed than in '19; not sure if that is either me or Is/Was. So, I keep them at my unusually high 4.5 for Overall Hugs.
