Talk Soft is a wheat saison by way of wit and/or weizen. It is brewed with two types of wheat to create a soft yet full mouthfeel. We purposefully reigned the ester production of our house saison yeast in to allow its phenolics, the compounds responsible for the ‘clove-y’ or ‘peppery’ notes in traditional wheat beers, to shine through.
Then we added honey from our friends at the Hive Supply. The Hive Supply sources hone frome hives throughout Chicago. Urban honey can be more complex than single varietal honeys due to the diversity of nectar sources available to the bees. To preserve this complexity while also making a dry, delicate beer we added the honey directly to fermentation.
The result is a soft, summer, sipper with notes of tangerine, cardamom, honeysuckle, clove, lime zest, white peppercorn, and jackfruit.

A very nice summer sipper. The major problem is me: I found Talk Soft just before Thanksgiving and drank it in the dead of winter. My missed opportunity. But the wheat bill in this saison and the overall experience makes me want to find it again.
Looks start great and surprisingly clear; that changes at the bottom of the bottle courtesy of the yeast. Smells are less interesting, although I know I'm about to drink a wheat ale with an active yeast. Tastes are good, but not great; balanced but not contrived. This simply introduces some stronger elements (more wheat and more yeast) to the saison; yet, it all plays nice together. Bubbles are nicely cleansing on the palate for more pasta with red sauce.
I'm becoming a fan of Is/Was and usually buy their saisons when I see them. Nice that bigger crafters let Is/Was brew in their shop. Everyone wins, including us reviewers.
