Brewed in 7/2019; bottled on 3/29/2020; consumed on 3/21/2022

Pours a crystal-clear, pale gold body sporting a steady effervescence and capped with just shy of three fingers of rocky, eggshell-white foam; decent head retention sees a thin veil of cap meet a moderate, frothy collar around the surface, while a thorough layering of dense, webby lacing clings tightly across the walls of the glass.

Aroma opens to nutty oak barrel over a soft funk, with shreds of macadamia edging to clean white wine and a more earthy, splintery oak grazing over the middle; a soft, cheesy funk finds slight minerality against a fading, grassy texture.

Taste shows white grape zest with hints of grassiness upfront as a slick and musty lemon funk advances, leaving oaky edges through stone fruit pits along the mid-palate as a brighter amalgam of composting orange, green apple, and a glossy underlay of cheesy funk linger through the back end of the profile.

Mouthfeel brings a light body with medium-full carbonation dispersing a spritzy prickle fading to a silky glide atop mild tartness over the mid-palate; bright acidity lingers into a wet back end, where a crisp finish evolves with a drying, oaky grit.

A delicate, beautifully reserved character manages subtle threads of bright funk and fruity undertones, with a quasi-rustic oak layering further intricacies to overall refreshment; a saison undemanding yet entirely engaging.

750 mL bottle. Batch 2. Mostly clear golden. Smells oaky, a little bit of bile acidity, some sweet doughy malt. Tastes of strong oak, yogurt, a little bit of bile, which builds in sourness. Oaky finish. It's ok, but not a big fan.
