Make Art Not Content is a 5.4% ABV mixed-fermentation Saison made with Coffee, Sage, and Peach Leaves, conditioned with Honey. The beer features Geta Bore, a single origin coffee from Ethiopia, roasted by our friends Metric Coffee here in Chicago, IL. Notes of roasted cacao nibs, vanilla, and poblano peppers lead the nose with softer supporting aromas of candied lemon peel, fresh herbs, and delicate white flowers. The peach leaves offer a subtle bitter almond character in both the aroma and flavor, complementing the soft herbal character of the sage, and rounding out the expression of the coffee. On the palate, the roast is soft and offers depth with notes of barely-burnt caramel and toasted nuts. The body and carbonation of the beer are both soft and creamy, creating a velvety texture, and the overall drinking experience is balanced with soft lactic acidity and a steely minerality.

I'm guessing this a second release; but I'm not sure as UnTappd has only 9 of its 173 check-ins this month.
Nonetheless, I think this rendition is different as the two previous reviews talked tart and this is very dry to me and not much tart. (And I'm very tart adverse.) Actually this is wonderfully dry, probably a combination of the coffee and herbs; but let's leave the subtlety wrapped in mystery.
This is my third from Keeping Together and I wish I could find and try more. This brewmistress (if I may) brings an absolutely refreshing and innovative touch. Not just thoughtful (and humorous) in naming her beers, the ingredients' blending also result in a very subtle and intriguing experience. For more, I'll have to root around and probably visit Half Acre's Balmoral taproom. A Votre Sante' !

The mostly clear, lightly sparkling gold body has a soft white head of moderate height that settles to a persistent, fuzzy film.
Smell's got a little funk and earth, but the coffee is just out of this world stupefying.
Taste features even earthier coffee that takes hold just after the barely tart introduction which hints at lemon. It's so earthy it lands into a sort of black bean territory.
Upon secondary sips, the aroma has some herbal Asian influences, like lemongrass and toasted sesame. This is what's making the taste even earthier and seem heavier despite its medium-light, frothy body, and otherwise tangy constitution.
It's such an intriguing dichotomy.

Draft at Half Acre Balmoral, 8 oz. pour served in a KT stemware glass.
Hazy saturated orange with a lasting head of sudsy foam and a halo of lacing.
Aroma is earthy and somewhat complex, the coffee is mild and reminds me of spent grounds.
Taste is mildly tart with earthy mellow coffee character, mild herbal sage, mild citrus.
Medium bodied, creamy with an effervescence that scrubs the palate.
Overall it's yet another solid mixed ferm saison from KT, always worth the admission price.
Maybe not quite as wild as the others, but certainly interesting and easy drinking.
