Sour Farmhouse Ale
Developed during our formative years, although its had several different names now we call it Somewhat Informal. Aptly named for its unconventionally short production time. Mashed on pale, wheat, honey, & rye malts. Hopped w/ Cascade, Saaz, & Hersbrucker. Notes of farmhouse cider, toasted rye bread, lemon rind, & orange blossom honey.

Carried this can from the curb at Beermiscuous, Chicago (my source for obscure and new Chicagoland brewers.)
With this rating, I now have twice as many saisons (8.4% of total ratings on BA) as AIPAs. Who among you can make that claim?
On my palate, Somewhat Informal is not a sour saison as advertised. It is nicely tart (and I am the sour-sensitive type.) It Looks like a slightly above average saison, the yeast stays active... tho could be more so if it truly wanted to be a great saison. Smells are average as the yeast really is timid in producing fruit aromas and the tart is more prominent. Tastes improve as the "sour" stays in balance (that is, it is only "tart"). In my mouth, it is semi-dry and probably too much so to have with a meal. (I probably will have a simple wit with today's soup.)
Probably only a year from homebrewer status; Dutchbag brews at the Pilot Project, five blocks from my home. Regrettably, I have not been to their taproom and probably won't until well after herd immunity is established beyond a shadow of the doubt. In the meantime, I hope The Pilot Project keeps canning Dutchbag (and its other handful of startups) and Beermiscuous keeps selling them. I like the Pilot Project's concept and wish them and all their brewers good luck. A Sante' !
