enjoyed from the bottle at the source, really loved our time here, this place is killing it. this is a soft and funky rustic grisette type that has been delicately dry hopped, perhaps their most brett forward beer we had in here, fantastic bottle conditioning on this too, really high peaky white headed and its wispy and lasting, looks great in the glass on top of a lightly cloudy brassy base. the nose and taste on this are both hop forward with fresh herbs and flowers, dandelion and lemongrass and key lime, light starchiness from the grain, maybe some unmalted wheat in this, perhaps a little rye spice too, and then the funky element of the ferment out in front of their house saison strain to me, still lightly spicy, now a tea-like bitterness too, some wet animal weirdness, straw and hay and grass, light grain richness, and some late juiciness from the hops, clean citrus, cantaloupe, honeydew, and even a cucumber greenness, hotel water, really complex and good, and very drinkable with a fluffy body and awesome carbonation. the hops add very little bitterness and somehow serve to lighten this not make it heavy. the grain has some depth to it, the ferment is bretty and wild, and the sourness stays out of it. really nice beer, i cant wait to go back here someday, super impressive little operation, i wish i grabbed a few bottles of this one for home!
