A rustic saison that is a two year blend. The grain bill we used 60% Wind Malt from Sugar Creek Malt Co. and 40% Raw Wheat from Granor Farm. We did a traditional turbid mash. with a four hour boil We used some 2yr aged centennial hops from Hop Head Farms. This beer is not spontaneously fermented or Gueuze/Lambic inspired. Let’s just call it a rustic saison.

Be careful, this was a GUSHER when opened...be near a sink!
Opaque orange/yellow appearance.
A slow pour yielded a small white head; minimal lacing remained.
Peach, pineapple & hints of lavender in the nose.
Medium mouthfeel.
Peach, lemon & mild lavender flavors.
Fruity and tart, but not too sour.
Delightful. I'd love to try another bottle come summer!
