Waxy honeycomb aroma and a full mouthfeel balanced by a bone-dry fermentation and high effervescence. The extended conditioning time pushes earthy aromatics of hay and light funk, grapefruit, spice, toasted brioche and honey.

Nice spicy pepper notes, tiny bit of sweetness, and some funk. So good!

Sparkling clear gold with a tall and very well retaining meringue head leaving skinny, spiking peaks of lace on the glass.

From one honey saison to the next, (specifically, after Hill Farmstead's Anna), this one's actually more delicate, wild and also sweeter. Hay, straw, corn & honey characteristics meet hints of horse blanket brett within an airy, fluffy body.

While sweet up front, the vanishing finish brings it back to an herbal bitterness. It also seems oaky, yet reminds me of the deliciously toasted corn, Cheerio and wheat qualities of Lawson's Scrag Mountain pilsner. Its light body also contrasts itself with a similarly, insanely fluffy filling feel.

Pours a very clear medium straw color, foamy head recedes fairly quickly. Aroma is earthy, grassy, a little funky, touch of honey and citrus. Honey is the first thing I notice, not sweetness. light bitterness / acidity, nice dry finish. Carbonation reappears once in my mouth, lots of foam. Surprisingly full bodied. Overall a nice beer, not really for me.
