What is Kanazawa Beer?

In the spring of 2016, Kanazawa Beer was born in a small old house as Kanazawa's best local beer. Our goal is to create high-quality beer that is loved in Kanazawa, a place where tradition and modernity intertwine. Although we are a small-scale brewery, our beer is like a crystal ball without a single cloud, thanks to our meticulous manufacturing process, including our home-cultured beer yeast, which is freshly started each time. In addition to its rich aroma and deep flavor, the packaging evokes the Kanazawa brand, allowing you to experience Kanazawa with all five senses. Please enjoy the rich aroma and deep flavor of every glass. Now, Kanazawa Beer has made its debut as a Kanazawa brand known around the world.

1. Pursue authenticity
We conduct extensive research into the in-house cultivation of yeast, adjustment of water, and the proportion of ingredients, which are considered the most important steps in beer brewing, depending on the style of beer we wish to create. Our beers are sure to offer a reliable taste that captures the deliciousness of the tens of thousands of different types of beer that exist around the world.
2. Fresh brewer's yeast
All our beers are made with fresh, home-grown yeast,
resulting in clear, clear beer. By using fresh yeast and maximizing the yeast's potential, we are able to produce high-quality beer without adding anything extra. Our company is especially particular about the beer yeast, which we check for live yeast under a microscope every time we brew, and we cultivate all of it in-house in a clean room.
3. Originality
Brewing high-quality beer rooted in the local Kanazawa area. This beer evokes the feeling of Kanazawa, the city of craft beer. The reason for its roots in the local community is the flexibility that only a small brewery can offer.
