actually this is one of the best paradox beers ive had, and its something really different from them, the process is cool, but the fermentation profile is new from them, its refined beautifully, is bretty and funky and tangy, more intentional than the haphazard overly bacterial weirdness i normally associate with their beers, i hope this is a sign of things to come from them, that old house culture was always a little off to me. this is awesome beer, really pretty in the tulip, creamy white headed and lightly hazy, straw colored, very lively on the carbonation, the head doesnt fade at all. there is an awesome floral character to the nose here, giving it a cool freshness set against the wood and the brett, which are well developed but not overly mature of assertive, which i like in this sort of thing, could be noble hops contributing this element, but im not sure. a light peppery almost belgian note when i taste it, soft wood, white wine, and really farmy brett thats dosed just right, great balance, and cool complexity in a relatively simple palate overall. i love the texture and the brett being there all the way through, uplifted and made light by all this carbonation. easily the best beer i have had from these guys on draft, and a cool new profile on this one. nice!

I recently drank Future Knowledge (the beer kind is the only future knowledge available) a Saison from Paradox Brewery, ABV 6.60%. I thought it was overall pretty good, not the best Saison, but slightly above average.

Look: hazy light yellow with a thin white head

Aroma: lemon, yeast, some brett funk

Taste: It's wheat crackers, tart lemon, and Brett funk, very little bitterness, a bit watery. It is a solid but somewhat plain Saison that is refreshing in the Texas heat.

Feel: light body, easy drinking

No date found, stored at 42 degrees and served at 46 degrees (Per bottle instructions) in a hand washed and dried Jester King snifter.
Appearance – 4.
Body – Medium yellow, clear, effervescent. Heavy sediment in bottom of bottle.
Head – Average (Maximum three cm, controlled pour down the center), white, fizzy, rapidly disappearing. Center island and snippets of ring formed by lively effervescence.
Lacing – None, as expected.
Pour – Very light yellow, clear.
Aroma – 3.5 - Weak sour grain and weaker horse blanket (?). Everything fades to nearly nothing while drinking a glass and typing this review.
Flavor – 3.5 -Tart with Brettanomyces funk, particularly horse blanket in the aftertaste. A touch of hop bitterness. No distinct maltiness, no alcohol, no diacetyl, no dimethylsulfide.
Palate – 4 - Light, watery, lively carbonation.
Impression and summation – 3.5 – Not the worst of this style. However, the lack of a flavor spectrum (at least to my taste) is disappointing. It certainly looks good but the odor is somewhat off-putting – if I didn’t know Brettanomyces sp were used to ferment this, I’d think it was contaminated. Still, not the worst saison I’ve ever drank and the price point is relatively painless.

Underattenuated, not at all tart. No farmhouse esters. Not sure what this even is! Slightly cheesy hops.

A: Light grains, slight citrus and with a bit of tartness, and faint oak.

A: Golden color, slight haze, with a thin even white head.

T: Crisp, with light grassy, citrusy favor with light funk and lacto tartness on the finish.

M: Medium-light bodied with moderate carbonation.

O: Tasty; very clean – the foeders add an interesting tartness that complements the base saison well!
